Fall Pumpkin Overload: Share Your Favorite Squash Recipes Beyond the Basics!

It's fall and I'm drowning in pumpkins! Can you share your favorite recipes for squash pasta sauce, soups, and other squash dishes? I'm open to any flavors and spice level. But particularly looking for options for soups beyond just the basic squash-sage-cream concept, since (as much as I love it) I think I need to change it up a bit to get through all these! Thank you.

This one is a bit different. The family really liked it until we figured out that youngest is allergic to pumpkins.
French Pumpkin Soup
New Age Journal, November, 1984
2Tbl butter
1/4 cup flour
4 cups milk
2 cups mashed cooked pumpkin
1/2 tsp salt
1/4 tsp pepper
2 Tbl parsley (I use dried)
1/4 tsp nutmeg
Cubed cheddar cheese
In a 2-quart saucepan melt butter and add flour. Add milk slowly, stirring constantly. When milk is heated add pumpkin and spices. Cook 20 minutes until soup thickens. Serve hot with cubed cheese on top..
Variations:
Add diced potatoes and/or corn while milk is heating.
Serve with a crusty French bread.
 
Roasting pumpkins or squash bring out a lot of flavor with Carmelization.
Butternut Mac n cheese freezes well. I can’t find my recipe but it used Gouda and parm.
 
This isn't an instant pot recipe but it is delicious and hearty and a little different. Maybe you could make it an IP recipe?
