Adjusting Sausage and Shells Recipe for Larger Batches: Tips for Making 2.5-3 Pounds of Sausage

If you are making sausage and shells or sausage and curls, and you know your teen is going fishing for the sausages, I want to make 2.5 or 3 pounds of sausage do you have to do anything different? I have always done 2lbs but thinking need more meat so there is leftover with meat and not just noodles.
 
One idea, in addition to the sausage in the normal recipe grill/fry up a package of sausage links and plop one of those down on his serving if the sausage and shells.
 
I crumble up the sausages (squeeze out of the casings), fry it like ground beef = no more fishing 😆. You could also buy ground pork and season it like sausage. That's a bit cheaper than sausages in my area. Adding fennel and italian seasoning makes it taste like Italian sausage.
