Instant Pot Beef Pot Roast Cooking Times: Need Help for Smaller Roasts!

Do you have the souvide option on your instant pot? Try maybe seasoning it with what you want, seal it in a food saver bag then add the liquid and do the souvide function. It will take a lot longer to cook but I hear it makes the meat really tender and juicy.
 
The 20 min per pound rule doesn’t always work for me. I found that if add another 20 mins and 15 min NR… seems to work perfectly. Very tender. Love that I can sear my meat and make gravy all in the same pot.
So simple…
Sear meat on sauté mode.
Add 2 cups beef broth (deglaze pot) and 1 pkg beefy onion soup mix. Cook HP for 20 mins/pound + 20 mins. 15 min NR. Remove roast (it may fall apart!) from pot and pour broth into measuring cup. Sauté mode with 3 tbsp butter and 3 tbsp flour. Gradually add in 1 1/2 - 2 cups broth to make gravy. We like it with mashed potatoes or rice.
