It’s funny you posted that. I was flipping through my book to get to the carbonara and passed the penne recipe and remembered how yummy it is and how a lot of people must not have tried it because I don’t see a lot of posts about it.
Don’t sleep on this one people. It’s yummy!
 
I am waiting for my Jeffrey Eisner Cookbook to arrive and try some recipes. I am unable to stand at the stove so think it will be my answer.
 
@meanstreak this penne took my about 20 minutes to prep, sauté and put the lid on it. There are a few small steps when it depressurizes but nothing big. All of his recipes are super simple in my opinion.
