One-Pot IP Pork Chops with Uncle Ben's Rice and Dawn Fresh Mushroom Sauce!

I'm feeling proud of myself! I adapted an old comfort food meal my mom used to make into a one-pot IP dish. Mom hated to cook and wasn't very good at it, but I still crave things she made. This is real mobile home park cooking. Pork Chops with Uncle Ben's converted rice and Dawn Fresh mushroom sauce. Edit: Picture of the Dawn Fresh added/recipe in comments.

This “recipe” is made to be tinkered with:
2 pork chops (boneless, medium thickness)
½ onion (or 1 medium shallot) diced
1 celery stalk/rib diced
2 baby carrots thinly sliced
1 rounded tsp minced garlic
Handful of sliced mushrooms
1.5 cups Ben’s Original parboiled long grain white rice (we always called it “converted rice.” I don’t know why.)
1.5 cups water
¼ cup soy sauce
Olive oil
Garlic salt, black pepper, Italian seasoning
1 can “Dawn Fresh Mushroom Steak Sauce”
Rub pork chops with olive oil, garlic salt, pepper and Italian seasoning
Set IP on sauté medium
When hot add a little olive oil
Brown chops on both sides, then remove
Sauté onion, celery and carrots for a couple of minutes
Add garlic and cook for another minute
Add mushroom and sauté until they brown a little
Add 1 cup water to pot and deglaze well
Turn off IP
Add ½ cup water
Add ¼ cup soy sauce
1.5 cups rice
Stir well
Put chops on trivet
Pour Dawn Fresh on top of the chops – Don’t stir!
Set IP on high for 6 minutes/NR for 15 minutes
 
I made this for dinner tonight and I was pleasantly surprised! I couldn’t find the Dawn Fresh so I subbed a can of pork gravy. The pork chops were good but the rice was my favorite! Thanks so much for sharing your recipe!💛
