My favs are:
The cookin chicks jambalaya (I add red beans)
Simple happy foodie: stuffed pepper soup
Diet hood: honey garlic chicken (tastes kind of like a Chinese chicken. I serve it with rice and veggies)
Salsa chicken is nice to just cook up a bunch, shred it and make different meals thought week like taco salads etc
 
@kb18. I Just bought some sausage that I thought was too smokey. I was going to give it to my son but I think I'll try the sausage &bean soup. I'm hoping Lexi is so impressed that she buys all of Jeff's IP cookbooks.

Others have mentioned Pressure Luck Cooking and I've made several of his recipes and they've all been really great. Especially the Sausage & Shells. So good!
